Tzatziki
Ingredients
- 350 g cucumber
- 300 ml full cream plain yoghurt
- 1 garlic cloce crushed
- 1 tbsp freshly squeezed lime juice
- 1 tbsp olive oil
- 1 tbsp finely chopped dill
- fine salt to season
Instructions
- Cut the cucumber in half lengthways and scoop out the seeds. grate the cucumber coarsely and squeeze out the excess liquid
- Placethe yoghurt in a bowl. Add the garlic, lime juice, olive oil and dill. Mix well, then stir in the cucumber. Season to taste with salt.
- Transfer to the fridge until ready to serve.
